Butternut Squash Soup! One of my favorites. It's that time of year again for warm yummy soups. I didn't use a recipe to make this, I just sort of threw it together with what I had around the house. I got the squash at the farmers market, but didn't think ahead to what I would need to make soup with it. lol I do that sort of thing all the time. Anyway, here is my recipe, I am sorry I don't have exact measurements, I don't measure things either.
1 Butternut Squash
1 Tbsp Coconut Oil
1 pat of Butter
Vegetable broth
Onion
Salt
Sugar In The Raw
Honey
Nutmeg
Almond milk
I cooked a little bit of chopped onions in the coconut oil and butter, then added just a small pinch of Sugar In The Raw to caramelize the onions (About 8 minutes). Then I added the Butternut squash with the vegetable broth, just enough to cover the squash and cooked on low with lid for 20 minutes. Then I took out the squash and put in blender with the almond milk. I put the pureed squash back in pot with just a tad of the vegetable broth it was cooked in (until you get it to the consistency you like). Add 1 Tbsp honey, pinch of salt and a tiny pinch of nutmeg.

Yum! I posted my favorite recipe for squash soup on my blog a couple years ago. You can find it HERE.
And HERE is a recipe I posted for creamy carrot soup. It's curried, and it doesn't have a strong carrot flavor. So yummy!
