Raw Cacao Truffles

Here is a great recipe if you love anything chocolate-y with coconut. Two of my favorite things! You don't have to cook or bake or anything complicated, just throw the ingredients together and they are done. That's why they are called Raw. Well you do need to put them in the freezer so they can set, but that's the great thing about these, you can keep them as long as you like without them going bad since they freeze so well.

Raw Cacao Truffles

¾ cup raw cacao powder
2 cups ground raw almonds (I used a food processor)
1/2 cup raw organic honey
1 Tbs. organic coconut oil
Pinch of Celtic sea salt
1 cup shredded, dried unsweetened coconut flakes

Combine all the ingredients except for the coconut flakes in a large bowl and mix thoroughly. Roll up your sleeves, take a small amount of the mixture, and roll small balls between your palms. Add your love! Dip each ball in a separate smaller bowl containing the coconut flakes.
Freeze overnight to harden the truffles.  You can freeze them up until it's time to serve them. Make sure they sit out for a bit or they will be too hard to bite into.

You really need to use the honey and coconut oil to get the consistency right, you can't substitute the honey for sugar or another sweetener. At first it may look like there is no way it is all going to mix together, but just keep stirring and it finally gets to the perfect consistency to roll into little balls.

This recipe makes about 20 truffles. I cut the recipe in half to get 10 of them.

I love these so much I just had to share. I found the recipe at Kimberly Snyders Health and Beauty Blog.

Oh my! It's pure food porn! Looks exquisite. I doubt mine would have lasted long enough to make it into the paper cake cups =)
